Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 medium carrots, peeled and sliced
- 2 medium celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 bay leaves
- 2 cups cooked and shredded chicken
- 2 cups egg noodles

Directions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until softened, stirring occasionally, about 5 minutes.
- Add the garlic and cook for another 30 seconds.
- Add the chicken broth, thyme, oregano, and bay leaves. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the cooked chicken and egg noodles to the pot and cook until the noodles are tender, about 10 minutes.
