Ingredients:

  • 4 sheets of ready-made yufka (phyllo) pastry
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 pound of fresh spinach leaves, washed and chopped
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of red pepper flakes (optional)
  • 1/2 cup of crumbled feta cheese
  • 1/2 cup of grated mozzarella cheese
  • 4 tablespoons of olive oil
  • 1 egg, lightly beaten

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and season with salt, black pepper, and red pepper flakes (if using).
  4. In a large bowl, combine the cooked spinach mixture, crumbled feta cheese, and grated mozzarella cheese. Stir to combine.
  5. In a 9x13 inch baking dish, layer 2 sheets of yufka pastry, brushing each sheet with olive oil as you go. Spread the spinach mixture evenly over the yufka sheets.
