Here's a simple recipe for Spinach Puff Pastry using ready-made yufka (phyllo) :
Ingredients:
- 4 sheets of ready-made yufka (phyllo) pastry
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 pound of fresh spinach leaves, washed and chopped
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes (optional)
- 1/2 cup of crumbled feta cheese
- 1/2 cup of grated mozzarella cheese
- 4 tablespoons of olive oil
- 1 egg, lightly beaten
Instructions:
- Preheat oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and season with salt, black pepper, and red pepper flakes (if using).
- In a large bowl, combine the cooked spinach mixture, crumbled feta cheese, and grated mozzarella cheese. Stir to combine.
- In a 9x13 inch baking dish, layer 2 sheets of yufka pastry, brushing each sheet with olive oil as you go. Spread the spinach mixture evenly over the yufka sheets.
- Top with another 2 sheets of yufka pastry, brushing each sheet with olive oil as you go. Brush the top layer of yufka with the beaten egg.
- Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crispy.
